(A)Bone broth
3 kg pork bones - 3 big bones + neck bones (sweeter)
3 litres water
(B)Spinach soup
200 gm spinach
6 red dates, dried ones
6 garlic in oil (roasted)
1 tbsp wolf berries
Salt to taste
(A)Boil pork bones covered in water for 15 to 20 mins, pour away scum and wash bones clean, rinse a few times to get a cleaner broth
Boil 3 litres water and add pork bones, simmer in low fire for 4 hours
*can add more water as you boil, make sure to keep fire to very low, just let it simmer
(B)Take half of bone broth and add 6 red dates, simmer for 20 minutes
Add spinach and cook for 3 to 5 mins, add wolf berries, garlic and salt to taste ( for 4 people)
Enjoy..
Freeze the other half of broth for the next recipe!!
