Fresh Milled Dinner Rolls
Makes 12 rolls
Ingredients:
1-1/2 Cup Warm Water
1/3 Cup Honey + 2 Tbsp
½ Cup Olive Oil
2 Cups Hard White Wheat Grain
1 Cup Soft White Wheat
2 Tbsp Sunflower Lecethin
2 Tsp Salt
1 Tbsp Instant Yeast
Directions:
Mill grain on finest setting. In a large mixing bowl add the water, honey and oil and sprinkle yeast on top. Mix in and let it bloom. Add dry ingredients to the water mix and knead let hydrate for 30 minutes. Turn on to board and knead for 10 minutes until smoothy and elastic.
Preheat oven with a Dutch oven to 400 degrees. Fold dough into itself and make 6 balls and place in heated Dutch oven. Cover and bake 30 minutes.
