Hello, my dear lovelies. Since it's getting colder and colder every day, I decided to cook spicy dish. This dish is quiet popular on tiktok. I've seen multiple recipes online and so I decided to try making it at home. This Kimchi Carbonara Udon is out of this world. It's the perfect dish when you want to eat a super spicy meal in winter.
I really like this dish because of it's unique combination and texture. It has kimchi and cream which makes it super spicy and creamy at the same time. In traditional carbonara, you do not add cream but in this dish, I feel like cream is needed to bring down the overpowering flavour of the kimchi. You can also add different types of protein in this dish like pancetta, bacon or pork belly; however, I only have sausages available so I used it in this dish.

Here are the ingredients you can prepare ahead for this recipe:
500 grams of Kimchi
1/2 cup of low sodium Chicken Broth
3 tbsp of Garlic Chives
700 grams of protein (Sausages, Pork Belly, Fried Tofu, Bacon, etc.)
40 grams of Gochujang
30 grams of Unsalted Butter
800 grams of Fresh Udon (thick noodles)
200 ml of Cream
Extra:
Garnish with Grated Parmesan Cheese
Garlic Chives
Sunny side up Egg with runny yolk
