Spicy, savoury, sweet and so so delicious. This is my seasonal favourite recipe and you just can't go wrong with it! Here’s how you make this corn cream at home 🤤
Ingredients :
Butter - 2 Tbsps
Flour/ Maida - 2 Tbsps
Garlic - 4 Cloves
Boiled Corn Kernels - 1.5 Cups
Sugar - 1/2 Tbsp
Salt & White Pepper - to Taste
Milk - 3/4th Cup
Corn Flour - 1/2 Cup
Topping
Green Onion Bulb - 2-3 nos
Garlic - 5 Cloves
Green Chilly - 1 No
Process :
* Heat up some butter in a saucepan, add in the finely chopped garlic along with the boiled corn kernels - sauté well
* Add in the flour along with the milk & allow the mix to thicken - breakdown the corn using a hand blender
* Next, add in the cornflour, sugar, salt & white pepper to taste - stir the mixture continuously until the cornflour cooks through
* Transfer the mix to a plate & allow it to cool down slightly - divide the corn mixture into equal portions & shape them into balls as shown in the video
* Coat them in corn starch from all sides - dust off the excess starch- fridge for 10 minutes
* Deep fry in hot oil until golden brown & crisp
* Meanwhile, to make the garlic crisp - to a saucepan, add in the finely chopped garlic, green onion bulb, green chilly along with some oil, cook on low heat while stirring continuously - once evenly golden brown, strain & use
* Serve the fried cream corn alongside some chilli oil, garnish with garlic & onion crisps, some spring onion leaves & Enjoy!
