Yes my return to regular posting just so happens to fall on International Sandwich Sunday. Today we’re headed down to Singapore for some Kaya Toast. Despited the use of the word toast in the name it isn’t an open-faced sandwich. Kaya is a coconut jam of sorts usually flavored with pandan leaves. I went to a couple of Asian grocery stores to see if they had any fresh pandas leaves but no luck. So I did the nest best thing and bought some pandan kaya imported from Singapore. The recommended plus up might seem a little odd but boy does it work.
