(3 Servings)
100g tapioca pearls/sago
1500ml water
300ml plant milk
200ml coconut milk
3-4 tbsp sugar (optional)
1 mango, cut into cubes
Any your favourite fruits
Method:
1.) Place water in a small sauce pan. Bring water to boil. (Do not add the tapioca pearls when the water is still cold)
2.) Add the tapioca pearls/sago into the boiled water. Cook over medium heat for 18-20 minutes or till translucent. (If the pearls still have tiny white dots in the centre, turn off the heat and cover the with a lid for for another 10 minutes).
3.) Transfer the cooked tapioca in cold water. Leave it submerged until ready to use.
4.) Cut half of the mango to blend, and cut another half of the mango into cubes for toppings.
5.) Place the mango, plant milk, coconut milk and sugar in a high speed blender. Blend into smooth puree.
6.) Drain the tapioca pearls and transfer to a big pot. Mix together with the mango puree. Stir well and set aside.
7.) Place the mango cubes into a glass jar and pour the prepared mango puree into the glass jar as well.
8.) Chill the mango tapioca pudding for at least 2 hours before serving.
