Ingredients
Water 1 Cup (16 tbs)
Butter 1⁄2 Cup (8 tbs) (1 stick)
Flour 1 Cup (16 tbs)
Egg 4
For chocolate cream filling
Whipping cream 2 Cup (32 tbs)
Confectionare's sugar 2 Tablespoon
Instant chocolate pudding mix 2 Tablespoon
For ganache
Semi sweet morsels 1⁄4 Cup (4 tbs)
Heavy whipping cream 1⁄4 Cup (4 tbs)
Vanilla extract 1 Teaspoon
Directions
GETTING READY
1. Preheat the oven to 400 F.
MAKING
2. Melt water with butter in a big pot.
3. Add flour and keep stirring until it forms a thick ball of dough.
4. Put the dough in a food processor, add one egg at a time and continue to mix until it reaches the desired consistency.
5. Transfer the batter to a piping bag and pipe 4 inch straight lines on a baking sheet.
6. Bake for 10 minutes at 400 F. Lower the temperature to 350 F and bake for another 20 minutes. Turn off the heat and let the eclairs sit in the oven for additional 10 minutes.
For chocolate cream filling
7. Beat heavy whipping cream in a bowl, until it forms soft peaks.
8. Add confectionery sugar and beat until it forms stiff peaks.
9. Fold instant chocolate pudding mix in the cream. Cover the bowl with a plastic wrap and place it in the fridge for until ready to use.
For ganache
10. Place a glass bowl on a pot filled with water on the stove top such that the bowl isn't touching the water. Put the morsels in the bowl, along with heavy cream and vanilla extract and continue to stir until melted.
FINALIZING
11. When the eclairs have cooled down. Slit them in half.
12. Fill one half with chcoclate cream filling. Take the top half and dip the top in ganache. Place it over the chocolate filled half. Repeat the same to make the remaining eclairs.
SERVING
13. Serve them all by themselves or with tea or coffee and enjoy.
