Make one easy Blueberry Cobbler with a handful of sweet fresh or frozen blueberries and a few simple pantry ingredients.

✴️ Ingredients
⅔ cup blueberries (about 3 ounces)
½ tablespoon granulated sugar
½ tablespoon lemon juice

✴️ For the Cobbler Topping
2 tablespoons all purpose flour
1 tablespoon granulated sugar
¼ teaspoon baking powder
⅛ teaspoon kosher salt
2 tablespoons milk

✴️ Instructions
1) Heat oven to 375° F (190° C).
2) Place the blueberries into a small ramekin. Stir in the sugar and lemon juice. Set aside.
In a separate small bowl, mix together the flour, sugar, baking powder and salt. Add the milk and whisk until the batter is smooth.
3) Pour batter evenly over the blueberries. Bake for 25-28 minutes, until the topping is golden brown.
4) Enjoy warm with a scoop of vanilla ice cream, if desired.

✴️ Expert Tips
A) If you have an abundance of fresh blueberries, you can easily freeze them by placing them in a single layer on a rimmed baking sheet. Place the baking sheet in the freezer until the blueberries are completely frozen. Then, transfer the frozen berries to a zip top freezer bag and store in the freezer for up to 6 months.
B) Feel free to switch up the type of berries you use. Consider using blackberries, chopped strawberries, raspberries or a mix of them all!
