2 1/4 teaspoons dry active yeast
1 cup warm buttermilk
1/2 cup butter softened, plus 2 tablespoons of melted butter for brushing rolls before baking - optional
1 egg plus 2 egg yolks for brushing the rolls instead of butter - optional
1/3 cup sugar
1 teaspoon sea salt
4 cups all-purpose flour
