Potato Bites Written Recipe With Directions :

Ingredients:

-Potatoes 500 gms
-Salt (Namak) ½ tbs
-Cooking oil 3 tbs
-Garlic (Lehsan) chopped 1tbs
-Red chilli flakes (Adh koti lal mirch) 1 tsp
-Cumin seeds (Zeera) powder ½ tsp
-Salt (Namak) ½ tsp or to taste
-Water (Pani) 1 cup
-White sesame (Safaid Till) 1 tbs
-Rice Flour (Chawal ka Atta) 5 tbs
-Fresh coriander (Hara dhania) chopped
-Corn flour 2 tbs
-Cooking oil for frying


Directions:

-Wash and scrub the potatoes and cut them into two pieces by cutting them from the center.
-Add salt to the water and boil the potatoes.
-After boiling the potatoes, mash them with the help of a masher (you can also grate the potatoes).
-In a wok, heat the cooking oil.
-After heating the oil, add chopped garlic and fry it for 30-40 seconds (make sure that color doesn’t turn golden)
-Then add red chili flakes, cumin seeds, and salt in it and mix well.
-Add water and leave it until it boiled.
-When water starts boiling, add white sesame to it.
-Gradually add rice flour and mix it well so that there are no lumps.
-Cook it for 1-1.5 minutes.
-Now turn off the flame, shift the mixture into the bowl, and cool it for 2-3 minutes.
-Add mashed potatoes and fresh coriander to the mixture and mix well.
-After this, add corn flour and mix it well with clean hands.
-Grease hands with oil and knead the mixture on a working surface and roll it.
-Now, cut it into 4-5 equal pieces with the help of a cutter.
-Take 1 piece and roll it on the working surface with the help of your hands.
-Now cut it into small pieces (shape of your choice).
-Similarly, make others in the similar shape.
-In a wok, heat cooking oil and fry the bites on a medium flame until golden brown (estimated frying time 3 minutes).
-Serve with chutney and tomato ketchup.


Tips and Tricks:

-Do not stir the spoon instantly after putting the bites in oil to keep them intact.
-When putting the bites in oil, gently stir the spoon after one minute so that bites turn golden brown from all sides.
