Plant-Based Beet Sauce & Red Lentil Fusilli Recipe👇🏼
Ingredients:
3 medium beets, roasted in foil, cooked and then peeled (the skins comes off easily this way)
1/2 cup nutritional yeast
1 cup vegetable broth or coconut milk for creaminess
1 onion
3 cloves garlic
2T EVOO
salt & pepper
1 8 oz. box red lentil fusilli
Instructions:
Roast the beets at 400°F for 45 mins, or until just fork tender. Sauté the diced onion and minced garlic with 2 tablespoons of olive oil until caramelized. Season with a pinch of sea salt and 1/4 teaspoon black pepper.
Boil the fusilli according to box instructions, reserving 1/2 cup of the pasta water.
Roughly chop the beets and add all ingredients, minus the fusilli, to a blender. Season to taste and loosen with the pasta water or more vegetable broth, if needed. Mix into the fusilli and enjoy! #shorts
