Lauki halwa or dudhi is a sweet Indian dessert made of bottle gourd and taste super delicious. This lauki halwa is so scrumptious and simple that you will enjoy making it any time of the year!
Ingredients
Bottle Gourd – 1 kilogram
Sugar – 1.5 cup (300 grams)
Mawa – 1 cup (250 grams)
Milk – 1 cup
Ghee – ¼ cup
Cashew nuts – 15
Almonds – 15
Green Cardamom – 6 to 7

Getting Ready:
1.Peel and cut the bottle gourds into big chunks and grate them. Finely chop the almonds and cashews and stone grind green cardamom seeds into fine powder.
Making:
2.Take bottle gourd and milk in a wok and place it on flame to simmer. Cover and cook it on medium flame for 3 to 4 minutes till it becomes tender and fragrant. Later, cook the halwa on high flame to evaporate the excess milk from it. Stir after every 1 to 2 minutes to prevent it from browning at base.
3.Then add sugar in the wok and mix really well. Again cook the halwa on high flame until its juice evaporates completely as the bottle gourd will release its juice after adding sugar. Stir the halwa at regular intervals.
4.In the meantime, roast the crumbled mawa in another pan on medium-low flame by stirring constantly until slight change in colour. Afterwards, transfer it in a bowl. Add ghee to the halwa and keep stirring constantly. Later, add roasted mawa, dry fruits and green cardamom powder in the halwa and mix thoroughly. Cook for 3 to 4 minutes more and turn off the flame and transfer it in a bowl.
Serving:
6.Garnish this lip-smacking bottle gourd halwa with some chopped dry fruits and serve it steaming hot or have it anytime.
Suggestion
Before making the halwa do taste the bottle gourd once as at time it comes bitter in taste and this can spoil your halwa.
