The process of changing a liquid into its gaseous state by applying heat. It means for evaporation it requires heat. This heat is known as the heat of evaporation.
The heat of evaporation depends on the type of liquid, temperature and air humidity.
This means any liquid evaporates using the heat taken from its surface ( called latent heat). because of this surface feels cools This effect is known as evaporation cooling.
Now we apply this to our Pot containing water
As we know Pot is made up of microscopic holes. When we fill the pot full of water in the pot, some water molecules come out from the microscopic hole. That's why we can see the pots are always wet. The water which accumulates on the surface of pot undergoes evaporation cooling. I.e water uses latent heat of pot leaves behind cooler pot surface and cooler water inside.
Amount of cooling depends on the amount of heat pot can absorb. In cooler weather or humid weather we can see there is no much cooling effect observed. Similarly, we can see Black colour pots much time, it is because it cools more than other colour pots, because Black colour absorbs more heat than white or other colours.
