Family, I know many are scared to roast vegetables because they really don't know how long to cook them. Roasting should be done at temperatures 400F or higher.
Determining doneness depends on the vegetable which is why I'm not in favor of adding different vegetables on one pan because they cook differently.
But the thing they all have in common is how you can tell when they are done.
Simply take a knife through the vegetable as I've done with this roasted butternut squash and if it goes through evenly without much give the vegetable is done. And of course always taste it!
