Ingredients

75g sugar (⅓ cup)(2.6 oz)
5g lemon zest (½ tbsp) (~1 lemon) (0.17 oz)
200 ml heavy cream (1 cup) (6.8 oz)
30g lemon juice (2 tbsp) (~1 lemon) (1.05 oz)
5g vanilla extract (1 tsp) (0.17 oz)

3 lemon shells ( to serve)

How to cook

- Zest a lemon.
- Mix lemon zest and sugar.
- Add cream.
- Stir until it boils over medium heat.
- Remove the boiling mixture from the stove.
- Add lemon juice and vanilla and mix.
- Strain the mixture through a sieve and pour into the emptied lemons.
- Chill in the refrigerator for at least 3 hours.
- Ready to serve.
