BROWN HOT AND SOUR SOUP
Ingredients
Chicken stock 8 cups
Mushrooms 4 sliced
Cabbage cut into tiny cubes ½ cup
Carrot cut into tiny cubes 1
Coriander leaves 2 tbsp
Spring onion leave chopped 2 tbsp for garnishing
Chicken breast 1 thinly sliced
Prawns chopped 8-10
Egg white 1
Chicken powder 2 tsp
Salt ½ tsp
Black pepper ½ tsp
Schezwan sauce 2 tbsp
Dark soy sauce 2 tbsp
Corn flour ½ cup dissolved in ¼ cup water
METHOD
Heat stock, add chicken and prawns, chicken powder, seasonings, sauces, all veggies, cook for 3 mins, add in dissolved corn flour paste, when soup is thick, lastly add egg white slightly beaten, stir and remove, serve garnished with coriander leaves and spring onion leaves.

HOT GARLIC CHICKEN
Ingredients
Boneless chicken ½ kg cut into fine julienne
Capsicum 1 julienne
Ginger julienne 2 tbsp
Green chilies thick 3 sliced diagonally
Mushrooms sliced 6
Spring onions 2 cut into 1 inch pieces
Soda bicarb ¼ tsp
Salt ½ tsp
Chicken powder 1 tsp
White pepper ½ tsp
Corn flour 1 tbsp
Oil ¼ cup
Chopped garlic 2 tbsp
Schezwan sauce 2 tbsp
Vinegar 2 tbsp
Sugar 1 tbsp
Dark soy sauce 1 tbsp
Chili oil 2 tbsp
Fried garlic 2 tbsp for garnishing
METHOD
Marinate chicken with soda bicarb, salt and ¼ cup water, add chicken powder, white pepper, and corn flour, mix well. Heat ¼ cup oil in a wok, add marinated chicken, stir fry for 5 mins and remove in a plate, add ¼ cup oil to the wok, fry garlic, add vegetables, stir fry for 1 min, add all the sauces, seasonings, fried chicken, mix. Lastly add chili oil, serve garnished with fried garlic.

YOUNGCHOW FRIED RICE
Ingredients
Boiled rice ½ kg
Sweet corn 4 tbsp
Carrot 1 chopped into tiny cubes
Cabbage 1 cup chopped into fine cubes
Mushrooms 6 sliced
Green onion leaves chopped ½ cup
Prawns 8-10 boiled
Chicken 1 breast cut into tiny cubes and boiled
Oil ½ cup
Eggs 2 beaten
METHOD
Heat oil in a wok, add 2 beaten eggs, let it settle for a min, then stir, add all the above vegetables and meat, mix well, add boiled rice, toss well, add seasonings. Lastly add spring onion leaves, mix and remove.
