Everyone can learn how to make Kimchi at home. It's just fermented cabbage with some other vegetables. It's a pickle! There are a zillion ways to make it and we do NOt claim this as the best or only way to make kimchi. It's been made for centuries, and we've made it a dozen times or so.... But... it's a great recipe, and as kimchi goes, a great way to start. We regularly eat this recipe for kimchi and use it all the time as a garnish or condiment. Homemade kimchi requires very few tools, only a few ingredients and some time. Follow our recipe and our directions and you will have an awesome homemade kimchi in just a few weeks!

* Napa Cabbage, one large head is good
* Daikon, probably about half a pound or so
* Carrot, roughly the same volume as daikon
* 4-5 garlic cloves
* 2 inch piece of ginger
* 1/4 cup Korean Chili flakes
