Funfetti Cookie Recipe
Ingredients:
1 + 1/2 Cups all purpose flour
1/4 Teaspoon sea salt
1/2 Teaspoon baking soda
1/2 Tablespoon corn starch
1/2 Cup butter melted and cooled slightly
3/4 Cup white granulated sugar
1 Large room temperature egg
1 Teaspoon vanilla extract
4 Tablespoons assorted sprinkles
Directions:
Preheat your oven to 350F/175C. Line 2 cookie sheets with parchment paper. In a medium bowl whisk together flour, salt, baking soda and corn starch. In a large bowl or the bowl of your stand mixer combine butter and sugar and cream together on low for around 30 seconds, or until the butter and sugar begin to incorporate. Add in your egg and vanilla and continue mixing on low for 2 minutes until the mixture is light in texture and pale in colour. Add your dry mixture into your wet mixture and mix on low until the dough just comes together and no streaks of flour remain. Add 2 Tablespoons of sprinkles and mix until incorporated. Place remaining 2 tablespoons of sprinkles into a small bowl.
Using a 1.5 Tablespoon cookies scoop (or using 2 spoons) scoop balls of dough and dip the top into the remaining sprinkle mixture. Place on your parchment lined cookie sheets, ensuring that you leave space for spreading. This recipe makes exactly 16 cookies if using the 1.5 Tablespoon scoop, so I put 8 on each pan. These cookies will bake for 8 - 10 minutes and need to come out as soon as the bottoms start to brown. They may look underdone but they will firm up once they cool down. Allow them to cool for a couple of minutes and then move to a wire rack to finish cooling completely.
