Today I have an amazing keto mini cheesecake recipe for you! I made some kind of a cookies and cream flavor, but obviously you can use any flavor you like from coconut over chocolate to strawberry! And another tip: in case you want to increase the fat, you can just add molten butter to the crust instead of water and you can use regular cream cheese instead of cottage cheese! Have fun with the recipe! :)
You need:
For the crust: 10g cocoa powder, 20g flax seed meal, 10g erythritol, a couple drops of stevia, 7 tsps. water
For the filling: 350ml hot water, 7g gelatine, 200g cottage cheese, 10g protein powder, a pinch of salt, a dash of lemon juice, some vanilla extract, 25 drops of stevia
