Recipe! You will need...

4 potatoes peeled and cubed into 1/2 inch cubes
1 and 1/2 cups cheddar cheese
1/2 cup sour cream
3 cups whole milk
3 cups chicken stock
8 slices of bacon
4 tbsp. butter
4 tbsp. all purpose flour
1 yellow onion
1/2 tsp. salt
1/2 tsp. pepper (or a little more)

In a pot brown the bacon to crispy and remove
leave the bacon grease in the pot and add the butter
and onions and saute' for 2 to 3 minutes on medium heat.

Add the flour and stir with a whisk constantly for 2 minutes.
add your milk and chicken stock and bring to a simmer
add your potatoes and simmer for 20 minutes or until
potatoes are soft.

Add sour cream, cheddar cheese, and the bacon you browned
up. add salt and pepper and simmer for 5 more minutes.
Garnish with chopped green onions!
