Some of our customers have problems rising the dough when working in colder than normal conditions, especially those who are working in Europe at Christmas markets.
Here is a simple idea which you can implement in your trailer, cafe or market stand. All you need is a couple of plastic boxes and some warm water.
After rising the dough for 45 minutes to 1 hour, split the large piece of dough into Kurtos size portions (say 190g of dough if you are using our WOODEN kurtoskalacs rolls) and roll each piece into a sausage shaped piece.
Pour some hot water into a plastic box, place a second plastic box on top of the box with the water inside and place the Kurtos sausages into the top plastic box and put a lid on top.
The heat from the water in the lower box will warm the top box where the dough sausages are stored which will assist the dough to rise so that its nice and flexible for rolling. The more risen, the easier and quicker the dough will be for rolling.
