The best steam iron for sewing is a steam engine aka steam ironing system which has an external water tank and can produce high seam pressures. I am showing an example on my Lelit PS326.

For sewing, you want the steam engine to:
- be made out of stainless steel
- have a big water tank
- be able to produce a continuous high-pressure flow of steam
- have a heavy ironing plate
