This truffle paste is made using tuber aestivum or black summer truffle . It is the traditional way for hunters to make use of a glut of truffles and a recipe that is replicated by many truffle companies. As with all fresh truffles, this paste does not have a long shelf life and must be stored in the fridge and consumed within 10 days.
