Know how to prepare the popular sambar from Udupi Mangalore region made from Mangalore Cucumber or Southekayi. The recipe given by me is close to that of cooks and caterers that prepare sambar during family functions and in temples.

Ingredients:
Mangalore Soutekai / Cucumber - 1 Medium Sized
Turmeric Powder - 1/2 tsp
Tamarind Water - 1/2 Cup
Salt
Jaggery - 1/2 tsp
Grated Coconut - 1 Cup
Sambar Powder / Huli Pudi - 2-3 Tbsp
Cooked Toor Dal - 1/2 Cup
Curry Leaves - 8-10
Coriander Leaves - 1 Tbsp
Method:
1. Transfer the chopped Cucumber to a vessel. Add water till it immerses the Cucumber pieces.
2. Add 1/2 tsp Turmeric Powder and mix once with the help of a ladle and allow to cook.
3. If needed, one can cook directly in the pressure cooker until you hear 1 whistle.
4. Once it is slightly cooked, close the lid and allow the Cucumber to cook for 5-10 minutes.
5. At this stage, add Tamarind Water, Salt as per taste, 1/2 tsp Jaggery and allow the mixture to cook.
6. For Masala : Add 1 Cup grated Coconut to a mixer jar, 2-3 Tbsp Huli Pudi / Sambar Powder, and add little water, and make a smooth paste.
7. Once the cucumber pieces are cooked add the ground masala paste and add little water. Mix once and allow it to boil.
8. Add 1/2 Cup cooked Toor Dal and mix well. Allow the mixture to boil.
9. Add 8-10 Curry Leaves and mix well. Allow to boil for 2-3 more minutes in medium flame.
10. Finally, add the Coriander Leaves. Mix and allow to boil for 2 more minutes and then switch off the flame. Quality cooking wares that I love and recommend. Many of these I use every day in my kitchen and in the videos as well. Thank you.
