Interviewer: "Roberto, when people buy their box, what add-ons and accessories do you recommend to make their Caja China experience that much better?"
Roberto: "Well, we highly recommend getting a wired meat thermometer. With a wired meat thermometer you always have control and know exactly the temperature of your meat which is very important. That said, having a wired meat thermometer for example when you are roasting a pig, you will connect that probe of the wired meat thermometer into the ham of the pig, and you will just add charcoal, seven to eight pounds of charcoal every hour until you reach 187. "
"At that time it's when you open the box for the first time and dispose of the ashes to crispy the skin, so this way it's really like a foolproof. You're just adding charcoal every hour until you reach you know, the desired temperature. "
"Also a cover, if your box is going to be sitting outside, you definitely will need a cover. The top grill to me comes very handy because you already have that charcoal going on top of the box and you're cooking inside, use it to do stuff on the top."
"Just like a regular grill do burgers or hot dogs or vegetables, and also the new ash disposal system. With the ash disposal system it makes it easier to dispose of the ashes. That way you don't burn the grass and don't have to worry about, you know, putting water over so it doesn't burn anyone. With the ash disposal system, disposing of the ashes is a, it's a matter of just dropping it in the ash bin with the grid inside the box, flipping the pig, or any other meat, and once you're ready just bringing out the grid and you keep the old pan with the ash inside and just close it down, so that makes it real, real easy. "
