Strawberry Crinkle Cookies are chewy and fudgy like their chocolate cousins but with the sweet/tart flavor of strawberry.
Strawberry Crinkle cookies are quick and easy to make, don’t require chilling and look as pretty as they are tasty.
Ingredients: (12 cookies)
¼ cup (56 g) Butter, Softened
½ cup (100 g) Sugar
1 Large Egg
¼ tsp Salt
½ tsp Vanilla Extract
1 cup (120 g) Flour
1 tsp (4 g) Baking Powder
20 g Freeze Dried Strawberry Powder
1-2 Drops Red Food Color (Optional)
⅓ cup (56 g) White Chocolate, Chopped (Optional)
Coating
2 tbsp Sugar
¼ cup Powdered Sugar
Directions:
1. Whisk or sift together flour, salt and baking powder.
2. Beat butter and sugar until well combined and lighter in texture. Add egg and vanilla and beat until light and fluffy. For a more vibrant color, add 1-2 drops of gel food color.
3. Add flour mixture and strawberry powder. Beat until combined. Stir in white chocolate, if using.
4. Scoop 1.5 tbsp (36 g) portions and coat in granulated sugar then powdered sugar. Place onto a parchment lined baking sheet and bake in a 350° F (177° C) oven for 11-13 minutes or until cookies are puffed and edges are set. Cool on baking sheet.
