DESCRIPTION:
This is a typical Karnataka dish made with brinjals and a nice blend of spices.
INGREDIENTS:
Oil 3 tbs
Garlic 6-7 cloves
Green chillies 3-5 nos
Tamarind 2-3 gms
Eggplant(pieces) 1 ½ cup
Curry leaves 1 spring
Coriander leaves ½ bunch
Salt To taste
Mustard seeds ½ tsp
Cumin seeds ½ tsp
Dry red chillies 2 nos
Chana dal ½ tsp
Urad dal ½ tsp
Turmeric powder ¼ tsp
Cooked rice 2 cup
METHOD:
1. Heat oil in a pan and add garlic, green chillies, tamarind, eggplant, curry leaves, coriander leaves, salt and saute it, later cook for 5 mins.
2. Keep aside and transfer into blender to make coarse paste.
3. Heat oil in another pan and add mustard seeds, cumin seeds, red chillies, chana dal, urad dal, turmeric powder, eggplant mixture paste and saute it.
4. To it add little water, cooked rice and saute it for 2 mins.
5. Now the eggplant rice is ready to serve.
