PREP CUPPING TABLE
14 grams (whole bean) coffee (± 0.25 grams)
Medium coarse (ground pepper) See sample.
Water (fill cup to the top)
Use filtered water, temperature shall be 200°F
± 2°F (92.2 – 94.4°C)
To sanitize spoon in-between coffees have a cup of hot water in the middle of the table to dip.
CUPPING STEPS
1. Smell the coffee grounds dry.
2. Pour hot water on the grounds to begin the brewing process.
Filtered water.
3. Break the crust that forms on top with
the back of the spoon push to the side
of the cup, agitating the grounds and
smell the aroma.
4. Skim the coffee grounds that are
floating on top and place in cup.
5. Taste each cup of coffee, rinsing your
spoon in a cup of hot water between
each sip.
6. Meet together and discuss scores,
tasting notes, and your general opinions
on the coffee.
