Ikan tongkol masak tempoyak
Bahan utama:
Ikan tongkol dan sambal tempoyak
Bahan bumbu:
Bawang putih,bawang merah,cabe rawit,cabe merah besar,jahe,daun salam,lengkuas,serai,daun kunyit,garam dan gula.
Cara-caranya:
1. Bersih kan ikannya.Kemudian dihiris sesuai dengan saiz yang kita suka.
2. Gorengkan ikannya.Dan sisihkan untuk sementara.
3. Lumatkan atau kisar bawang putih,bawang merah,cabe rawit,cabe merah besar dan jahe
4. Tumiskan Bahan yang telah dilumatkan tadi.
5. Masukkan daun salam,serai dan daun kunyit. Ditumis sampai berbau harum.
6. Masukkan sambal tempoyak. Gaulkan secara merata.
7. Masukkan lengkuasnya. Gaulkan rata.
8. Masukkan air secukupnya dan biarkan sebentar sehingga bumbunya mateng.
9. Masukkan cabe merah, dan gaulkan
10. Perasakan dengan garam dan sedikit gula.Gaulkan merata.
11. Akhir sekali masukkan ikan yang telah digoreng tadi.
12. Gaulkan perlahan-lahan sehingga bumbunya sebati dan meresap kedalam isi ikan.

Tongkol fish and tempoyak sauce
Information:
TEMPOYAK is a fermented durian, a traditional condiment in Malaysia and Indonesia often mixed with coconut milk curries or pounded with chilies into a spicy dip. It was developed as a way to both use overripe or poor quality durians and preserve them through the months after durian season.
And it’s actually pretty tasty.
Seasoning ingredient:
Garlic, shallots, cayenne pepper, large red chilies, ginger, bay leaves, galangal, lemongrass, turmeric leaves, salt and sugar.
How to do.:
1. Clean the fish. Then slice it according to the size we like.
2. Fry the fish and set aside for a while.
3. Mash or grind garlic, shallots, cayenne pepper, large red chilies and ginger
4. Saute the ingredients that have been crushed earlier.
5. Add in the bay leaves, lemongrass and turmeric leaves. Sauté until it produce appetizing aroma.
6. Add in the tempoyak sauce. Mix evenly.
7. Add in the galangal. Mix evenly.
8. Add in enough water and leave it for a while so that the seasoning is totaly cooked.
9. Add in the red chilies, and mix
10. Add in the salt and a little sugar. Mix evenly.
11. Finally add in the fish that has been fried earlier.
12. Mix slowly and carefully so that the seasoning is really absorb into the fish meat.
Thats it, ready to be serve.
