Ingredients Inspired by Greece (IOS)
Preparation time: 10 mins
Cooking time: 1hr 45 mins (I added an extra 15 minutes to the roasting time at 180dC)
Total time: 1 hour 55 minutes
Whole Chicken (1.2K – 2.65lLB)
Potatoes
Lemons (juice and zest)
Onion (optional)
Garlic
Long green peppers (optional)
Bell pepper (optional)
Olive oil
Mixed herbs or oregano
Chilli flakes or powder (optional)
Mustard (to brush over the chicken)
Salt and black pepper
1 heaped teaspoon of honey (optional)
Note: Every oven is different so please ensure you adapt cooking times to suite your ovens i.e. fan assisted, gas or other. The important thing to note is to ensure your chicken in fully cooked and the juices run clear with no pink and the internal temperature should read 165oF or 74dC.
As you can see from the video the chicken was cooked perfectly. It was very juicy and tender and flavourful. I did also flip the chicken over so I could roast the other side for the extra 15 minutes.
I added 1 heaped teaspoon of honey from IOS to mellow out and compliment the lemony flavour of the beautiful chicken juices used for the gravy....absolutely yummy! My friends were drinking it with spoonsx
