How to make authentic Piadina
Ingredients:
•500g flour typo ‘0’ or bread flour
•100g of Lard or olive oil
•180ml of water
•10g of salt
•1 tsp of baking soda
Instructions:
1- Make a well with the flour and add the lard, salt and baking soda and mix.
(Don’t use all the water at once maybe leave 3 tbsp and if it’s too dry add layer)
2- Knead the dough until smooth then cover and let it rest for 30mins.
3- Roll the dough into a log and divide into 6 equal balls.
3- Laminate each ball and then roll out (thin) If the dough gets tough just leave to rest for 20mins. Also do not add flour in this step.
4- Preheat a pan to medium heat and add the rolled out dough. It takes around 2 mins each side but keep checking until desired color!
5- Add any toppings. First one I used squacquerone cheese, prosciutto and arugula which is very traditional in Romagna ! And the second one is nutella!
