From [ Ссылка ] - This video shows the artisan craft of sea salt harvesting. On Vancouver Island, Jeff Abel of Saltwest Naturals demonstrates how to harvest sea salt using steam evaporation and a unique solar evaporation process.
Saltwest is one of a handful of artisan sea salt producers in Canada, and is the only commercial solar sea salt harvester in Western Canada.
Using large steam evaporation kettles, the salt harvestry produces artisan flaked fleur de sel, a mineral-rich sea salt with distinctive irregular crystals and a crunchy texture. Flaked sea salt is prized as a finishing salt, which adds flavor to vegetables, eggs, fish and meat, as well as to chocolate and caramel.
Saltwest also harvests solar sea salt, a rarity in Canada and the Pacific Northwest, where the wet, windy Pacific maritime climate poses challenges to salt harvesters. Taking advantage of the favorable summer months on Vancouver Island, Saltwest developed unique solar evaporation greenhouses to produce sun-dried salt.
Sun-dried sea salt has larger crystals and retains more beneficial trace minerals than steam-evaporated sea salt. It’s unusual square-shaped crystals provide a punchy, concentrated burst of saltiness. Solar sea salt stands out as a finishing accent for foods of all kinds.
