What to do when it's raining? How about some DIY, refreshing your workspace or living space or just simply bake something delicious? In this video you can find out how to make the easiest pastry that can be used for both savoury and sweet recipes. Apple strudel is one of the most popular bakes back in The Czech Republic and a yogurt pastry is a secret (not anymore) recipe of Zuzana's grandmother. Recipe follows below.
Those of you who have watched our previous videos know we harvested our grapes and began the wine making process last week. After 11 days it was time to transfer the fermenting juice into the vats for secondary fermentation. You can see some of the process here as well.
Autumn is definitely on its way now and the first storm of the season has passed leaving a little bit of damage behind but also so much needed water. Grass is growing again, sheep and goats are happy and chicken are vigorously scratching the ground for bugs. Together with the rain and sun we are anticipating our favourite autumn past time of all and that is mushroom foraging. I have a feeling it will be a good one this year.

Apple strudel recipe

Yogurt pastry
500g flour
220g vegetable fat
1 egg
150ml white yogurt
mix together until smooth

One advantage of this pastry is the fact you can work it straight away. There is no need waiting an hour or so like with other (shortcrust) pastries.
And because there is no sugar involved you can use it in savoury recipes as well. We use this pastry when we make nettle spinach and cheese pastries.

for the filling you need:
6 medium apples cored, peeled and grated
2 sachets of vanilla sugar
cinnamon powder
sultanas

I don't add more sugar depending on the sweetness of the apples

Divide pastry into two equal parts
Roll out into rectangular shape
Spread half of the apple mixture and roll securing the ends as in the video

Place both rolls onto a baking parchment and brush with beaten egg in a little bit of milk

Bake in preheated oven on 180 degrees Celsius until golden

Leave it to rest on a cooling rack before cutting

You can also sprinkle a little bit of icing sugar on top (I have run out) for decoration
