The talented Chad January is sharing his go-to recipe for delicious chicken wings. Now, roll your sleeves and get ready to dig in.
SPICY CARAMEL CHICKEN WINGS
Serves 6 | Less than 30 mins
2 cups (500ml) light brown sugar
1½ cups (375ml) water
4 spring onions, sliced
4 jalapeños, sliced
3 Tbsp (45ml) chilli flakes
Juice (30ml) of 1 lime
Few drops Worcestershire sauce
3 Tbsp (45ml) fresh coriander, chopped (optional), plus extra for serving
36 chicken wings, cooked (oven-baked, fried or steamed)
Lime wedges, for serving
Onion rings or chips, for serving
Method:
Place sugar and water in a large pan or wok and cook for 8-10 minutes, or until the solution changes to an amber colour.
Add spring onions, jalapeños, chilli flakes, lime juice, Worcestershire sauce and coriander, if using. Cook for 2-3 minutes, stirring at regular intervals.
Toss chicken wings in sauce in batches. Once coated, remove and place on a serving platter.
Garnish with fresh coriander and lime wedges, and drizzle with extra sauce.
Serve with onion rings or chips.
