Ingredients
4 large eggs
4 oz cream cheese (or coconut cream)
1 cup almond flour (or 1/4 cup coconut flour)
2 tbsp melted butter or coconut oil
2 tsp vanilla extract
2 tbsp Erythritol (or coconut sugar for paleo waffles)
2 tsp baking powder
Instructions
1. In a large bowl crack the eggs, add vanilla extract and mix with an electric mixer for about 2 minutes until frothy
2. Add the softened cream cheese or coconut cream and continue mixing.
3. Mix in the dry ingredients: almond flour, sweetener, baking powder until you get a smooth waffle batter.
4. Preheat your waffle iron and grease it with butter or cooking spray.
5. Pour up to 1/3 cup batter into the waffle iron and cook until golden brown and crispy.
6. Serve immediately with butter, berries, or sugar-free maple syrup.
