NO BAKE BLUEBERRY CHEESECAKE
This no bake blueberry cheesecake is very easy to make. it is a great dessert for making ahead of time to serve to the guest or to bring to a friend's house. I am really like the texture and the taste of the blueberry cheesecake they are just perfect, sweet and sour taste that I am really love it and my husband too.
INGREDIENTS:
CRUST:
* 100 g of crushed biscuits (digestive)
* 50 g of melted butter
CREAMCHEESE:
* 225 g of cream cheese
* 85 gr of icing sugar
* 1 lemon (zest and 1 tbsp of lemon juice)
* 15 g of flavorless gelatin powder ( stick or sheet)
*2 tbsp of boiling water
* 350 g of whipping cream( sorry in the video was wrote 250 g)
TOPPING:
*250 g of fresh blueberry ( frozen)
* 3 tbsp of granulated sugar
* 1/2 tbsp of lemon juice
* 50 g of water
* 1 tsp of unflovour gelatine
INSTRUCTIONS:
1.Provide a zip lock bag to contain biscuits and smash it with rolling pin until smooth and fine ( if you have grinder is would be easier)
2. Place it into bowl and add the melted butter, mix together until butter dissolved.
3. With round mold size 7x3 (1874) pour the crust and spreading equally and press it to form firmness, then chill in the refrigerator for 30 minutes.
4. Meanwhile make a cheese part, smash it 225g of cream cheese with spatula until smooth before add other ingredients and add the powder sugar mix it. Grated the lemon zest and squeeze the juice out add on to cheese mixture just 1 tablespoon of the juice, also add the gelatin that already mix with hot water.
5. In other mixing bowl, whisk 250 g of whipping cream until slightly thick (not over whisk)
6. Pour the whipping cream gradually into cheese mixture and mix gently
7. Take out the crust from the fridge and add in the cheese batter directly and smoothen the surface part, chill in the fridge for about 4-5 hour (or over night)
8. Blueberry jam, over low heat in a sauce pan add 250 g of fresh blueberry add then sugar, lemon juice and water, cook until boiling and get lessen a juice.
9. Pour the Blueberry jam into a bowl add 1 tsp of gelatin, mix together and let it cool down
10. After blueberry is cold pouring into cheesecake, chill again to the refrigerator for about an hour
11. To take out the cheesecake from the mold, soak a towel in warm water squeeze it the water off then put the towel all over the mold about 30 second and then pull up the mold.
12. Cheesecake dessert is ready to serve. Enjoy!!!

BAHAN:
Crust/kerak:
* 100 g biskuit tumbuk (digestive)
* 50 g mentega cair
KRIM KEJU:
* 225 g keju krim
* 85 gr gula pasir
* 1 lemon (parutan kulit dan 1 sdm jus lemon)
* 15 g bubuk gelatin tanpa rasa (batang atau lembaran)
* 2 sdm air mendidih
* 250 g whipping cream
TAMBAHAN:
* 250 g blueberry segar (beku)
* 3 sdm gula pasir
* 1/2 sdm jus lemon
* 50 g air
PETUNJUK:
1. Sediakan kantong zip lock untuk menampung biskuit dan hancurkan dengan rolling pin hingga halus (jika memiliki grinder akan lebih mudah)
2. Masukkan ke dalam mangkuk dan tambahkan mentega cair, aduk hingga mentega larut.
3. Dengan cetakan bulat ukuran 7x3 (1874) tuang kerak dan olesi merata lalu tekan hingga supaya agak padat, kemudian dinginkan dalam lemari es selama 30 menit.
4. Sementara itu buat bagian keju, hancurkan 225g krim keju dengan spatula sampai halus sebelum ditambahkan bahan lain dan tambahkan gula bubuk. Parut kulit lemon dan peras jus nya, tambahkan ke campuran keju cukup 1 sendok makan jus lemon, tambahkan juga agar-agar yang sudah dicampur dengan air panas.
5. Di mangkuk lain, kocok 250 g whipping cream hingga agak kental (jangan berlebihan mengocoknya)
6. Tuang whipping cream sedikit demi sedikit ke dalam campuran keju dan aduk perlahan
7. Keluarkan kerak dari lemari es dan tambahkan langsung adonan keju dan haluskan bagian permukaannya, dinginkan di lemari es selama kurang lebih 4-5 jam (atau semalam)
8. Blueberry jam, dengan api kecil di dalam panci tambahkan 250 g blueberry segar tambahkan gula pasir, air jeruk nipis dan air , masak sampai mendidih dan jus berkurang sedikit.
9. Tuang selai Blueberry ke dalam mangkuk tambahkan 1 sdt gelatin, aduk rata dan biarkan dingin
10. Setelah blueberry dingin tuangkan ke dalam cheesecake, dinginkan kembali ke lemari es selama kurang lebih satu jam
11. Untuk mengeluarkan cheesecake dari citakan, panaskan handuk dengan air hangat peras lalu lingkarkan selama 30 detik ke citakan. boeh angkat
12. Pencuci mulut cheesecake siap disajikan. Enjoy!!!
