Old-Fashioned BLUEBERRY COBBLER!! Fast and simple to make!! A must try blueberry dessert!! Recipe below...
BLUEBERRY COBBLER
Preheat oven to 350 degrees F.
Butter 1-8"X8" baking pan. Set aside.
2 cups fresh or frozen blueberries
1 teaspoon ground cinnamon
1 teaspoon fresh lemon juice
1 cup all-purpose flour
3/4 cup sugar
1 teaspoon baking powder
1/2 cup milk
3 tablespoons butter, melted
1 Tablespoon corn starch
1/2 cup sugar or more or less depending on sweetness of blueberries.
1 cup boiling water
1. Add blueberries, cinnamon, and lemon juice to prepared baking pan. Toss until blueberries are evenly coated.
2. In a medium bowl; add flour, baking powder, and sugar. Stir until well blended. Add milk and butter. Stir until smooth. Using a spoon drop batter on top of blueberries.
3. Mix together cornstarch and remaining sugar. Whisk. Sprinkle evening over top of batter. Pour over 1 cup of hot boiling water.
4. Bake in preheated oven, on middle rack, for 45-50 minutes or until toothpick inserted in the middle of dough comes out clean.
5. Serves with whipped cream, ice-cream, or just BLUEBERRY COBBLER!!
TIPS: Cover and store in refrigerator covered up to three days. Heat in microwave unto desired warmness.
