One of the fun things about a Farmer's Market is the items change during the summer months. A new product cropping up at local markets is microgreens. Microgreens are young seedlings of edible vegetables and herbs harvested less than 14 days after germination. They are considered a super food packed with antioxidants and other healthy nutrients. Rebekah May, a local farmer and member of the Healthy Communities Coalition of Storey and Lyon Counties, makes a delicious salad using microgreens and other food she found at a recent farmer's market in Carson City.
Microgreen Salad
2 cups microgreens
1/2 cup mandarin oranges
1/2 avocado
1/4 cup finely grated carrots
1/3 cup fresh peas
1/4 cup finely grated fresh beets
1/4 cup chopped walnuts
1/2 cup crumbled goat cheese
Salad Dressing
2 T. olive oil
2 T lemon juice
1 clove garlic minced
Dash of salt and pepper
