Ingredients:
Basmati rice - 1 cup
Coconut milk - 2 cups
Ghee - ½ tbsp
Oil - 2 tbsp
Cinnamon - 1 inch
Cloves - 4
Cardamom - 2
Bay leaf - 1
Onion - 1
Green chilies - 6
Tomato - 1
Carrot - 1
Beans - 10
Coriander leaves - few
Mint leaves - few
Ginger garlic paste - 1 tbsp
Method:
Wash and soak the basmati rice for 15 minutes.
In a pan, add ghee and oil and let it become hot. Add cinnamon, cloves, cardamom and bay leaf to the hot oil and let them splutter. Add chopped onion and saute until translucent. Add green chilies, ginger garlic paste and fry until raw smell leaves. Add chopped tomato and fry until mushy. Add the veggies and mix. Add coriander leaves, mint leaves and stir. Add salt to taste. Add the coconut milk and bring it to a boil. Add the soaked rice, mix everything together. Cover and cook on a medium flame for 2 minutes. Mix it once, cook on a low flame for 10 minutes. Switch off the flame and let it rest for 15 minutes. Serve with any curry you like.
