The recipe for my Ukrainian VEGETARIAN Borscht - Борщ :
Boil on a small fire in 2-2.5L of water:
3 medium size potatoes - cut in big cubes;
2 small carrots(or 1 big) - cut in circles;
1 medium size onion - cut in small cubes;
boil everything together for 20 min.
1/4 of small cabbage - shredded.
boil 10 min more and then add:
a can of pees/beans;
1/3 of sweet pepper cut in cubes or shredded ;
2 table spoons of olive oil;
1/2 kg of beta - shredded;
a can of tomato sauce or 300 gr of blended tomatoes;
juice of 1/2 of a lemon;
1 tea spoon of powder veegtable bouillon;
1/2 table spoon of salt;
1 table spoon of sugar;
then mix 200 gr of cooking cream or saur crem with a bit of water and 1 table spoon of flour in a separate cup and add it into the soup as a finish ingredient.
After 3 min you can tun off the fire.
All the proces starting from cutting vegetables and finishing with turning off the fire takes around 2 hours.
