1/2 lb shrimp, peeled and deveined
1 small minced shallot
1 Tbsp minced garlic
1/2 yellow onion, diced
4 stalks green onions, chopped
1/3 cup dried black fungus slivers (also called wood ear mushrooms), soaked
6 large eggs, 4 eggs in the meatloaf, and 2 egg yolks for the top
1 bundle bean thread noodles, soaked
2 Tbsps fish sauce (Three Crabs)
2 tsps chicken powder (Lee Kum Kee)
2 1/2 Tbsps sugar
1 Tbsp vegetarian oyster mushroom sauce (Wan Ja Shan)
1 tsp black pepper
1 tsp sesame oil
2 Tbsps olive oil
1 red jalapeño (garnish)
