🌿Recipe:
Baked Mediterranean Falafels
High-protein, Low-calorie, and High in Fiber🍃
Ingredients:
* 4 cups cooked chickpeas
* 2 cups packed fresh spinach
* 1 cup packed fresh parsley
* 1/2 cup ground flaxseed meal
* 2 tablespoons ground chia seeds
* 1/4 cup grated lemon zest
* 1/2 cup fresh lemon juice
* 1/2 cup finely chopped onion
* 4 cloves garlic, minced
* 1 teaspoon ground cumin
* 1 teaspoon ground coriander
* 2 teaspoons smoked paprika
* 1 teaspoon baking powder
* 1 teaspoon baking soda
* 1 teaspoon sea salt or to taste
* 1 teaspoon black pepper
* 1 tablespoon olive oil
Instructions:
* Combine ingredients: Add all ingredients to a food processor and pulse until finely chopped, but not completely smooth. It should be somewhat moist.
* Taste your mixture, to see if you need to add additional spices, salt or herbs.
* Shape falafels: Use a large spoon to scoop out the mixture, and shape into patties. Make sure they're all the same size, so they cook evenly.
* Bake: Preheat oven to 375°F (200°C). Lightly grease a baking sheet or use parchment paper.
Place the Falafel patties on the prepared sheet and bake for 25-30 minutes, flipping halfway, or until golden brown and crispy on the outside.
* Serve: Serve as a meal as shown in my Video✨ Enjoy with hummus, pita bread 🥙 or Naan, with your favorite fresh veggies 🥗 and your favorite toppings.
Chef Angelica's 👩🍳 Tips:
* For a Crispier Falafel, let the mixture chill in the refrigerator for at least 30 minutes before shaping.
* Experiment with different spices, greens, veggies and herb mixes to customize the flavor to your taste.
* You can also shape these into balls, and fry these in olive oil if desired.
