Originally from Senegal, Yassa is an onion forward dish prepared with marinated poultry or can be fish of lamb. Yassa has become popular throughout West Africa as its easy to make and doesn’t use a lot of ingredients. Also known as yassa au Poulet due to the French influence of the region, its often served with scalp itchingly hot Piment, a very spicy sauce made from scotch bonnet peppers, but any hot sauce suffices.
