How to cook spatchcock chicken over an open fire

Prepare with a spice rub of your choice sprinkled all over the top.
cook for 60 minutes laying the chicken on the grill grate, (you can cook this on any type of grill you have, I used the cowboy grill by Barebones Living) or until the temperature of the chicken reaches an internal temperature of 165˚

crack open a cold beverage and enjoy both the chicken and the beverage.
