INGREDIENTS :
500 grams to 1 kilo whole fish of your choice, scaled and gutted
1 small can of canned pineapple chunks, reserved the juice
1 onion, sliced
1/2 tbsp crushed ginger
4 cloves garlic minced
1 large tomato, sliced
1/2 red bell pepper, sliced
salt to taste
cooking oil.
DREDGE : salt, plain flour
SAUCE :
1/2 cup pineapple juice
1/2 cup water
3 tbsp tomato sauce
2 tbsp white vinegar
2 tbsp white sugar
1 tbsp cornflour/cornstarch
