For todays video, I will be sharing with you the "Meot" of Korea.
What is "Meot"?
"Meot" (멋) in Korean refers to style, charm, or coolness. It's often used to describe someone or something that is fashionable, stylish, or has a certain flair.
"meot" (멋) can also be applied to Korean cuisine, typically to describe the presentation, flavor, or overall experience of a dish.
when "meot" is used in relation to Korean cuisine, it conveys a sense of excellence and aesthetic pleasure, highlighting the impressive and enjoyable aspects of the dining experience.
Today I will be recreating Japchae, I will be using chicken for the meat because I already made Japchae before using beef and pork, so now I will try it with chicken and wide glass noodles.
Japchae has a rich history that dates back to the early 17th century during the Joseon Dynasty. It is believed to have been created by Yi Chung, a court chef, for a royal banquet hosted by King Gwanghaegun. The dish was originally made without noodles and consisted solely of vegetables and mushrooms. The king was so impressed with the dish that he promoted Yi Chung to a high-ranking position in the court.
Over time, japchae evolved with the addition of dangmyeon (sweet potato starch noodles) in the early 20th century, which have since become a defining ingredient of the dish.
Regarding the concept of "meot," which can refer to stylishness, elegance, or a refined sense of beauty in Korean culture, japchae can indeed be considered a representation of meot. Its colorful and aesthetically pleasing presentation, combined with a harmonious blend of flavors and textures, exemplifies the Korean appreciation for balance, beauty, and culinary artistry. The dish's historical association with royal banquets and special occasions further enhances its status as a refined and elegant part of Korean cuisine.
Japchae is a popular Korean dish made primarily from sweet potato starch noodles, known as dangmyeon, which are stir-fried with various vegetables, meat (often beef), and seasoned with soy sauce, sugar and sesame oil. It is known for its unique chewy texture and its colorful presentation. Common vegetables in Japchae include carrots, spinach, mushrooms, and bell peppers. The dish can be served hot or cold and is often enjoyed during special occasions and celebrations in Korea.
These ingredients are typically stir-fried separately to maintain their vibrant colors and individual flavors, resulting in a visually appealing and diverse dish.

Veggies such as: Mushroom, Carrots, Spinach, Onions, and Bell Peppers
To make:
Japchae Sauce
Soy sauce
Sugar
Sesame Oil
Pepper
Marinate
Chicken and Mushroom:
Green Onions
Garlic
Soy sauce
Sesame Oil
Salt and Pepper
Marinate
Local Spinach - Kangkong
Garlic
sesame oil
salt
Stir Fry one by one
Noodles cook according to package instructions
