ESSENTIAL TIPS
*eggs are fridge cold (for this recipe)
*you place eggs first in an unheated pot, them pour boiling water onto the eggs. do not boil water and put eggs into THAT heated pot. Eggs will be overcooked.
Ingredients:
2 fridge cold eggs (about 70g - 90g each)
dash of light soy sauce
750ml water
Method:
Place eggs in a saucepan that has a well fitting lid
Boil water separately. When water comes to a rolling boil, pour onto cold eggs.
Immediately set a timer for 6 minutes
Remove immediately at the 6 minute mark and leave to cool slightly (only because it is too hot to handle at this point)
