No Tomato No Onion Chutney

Allam Pachadi / Ginger Chutney

Recipe

Soak a marble sized Tamarind in 2 tbsp hot water

Dry roast

Urad dal - 1 tbsp
Cumin seeds - 1 tsp
Dried chillies - 6 nos (I used Kashmiri chillies)
Coriander seeds - 1 tsp

Transfer to a blender

Ginger - 1/2 cup
Garlic - 4 cloves
Add soaked tamarind along with water
Jaggery - 1 or 2 tsp
Salt to taste
Grind it finely
Add tempering to it and enjoy

For tempering

Sesame oil - 4 tbsp
Mustard seeds - 1 tsp
Urad dal - 1 tsp
Hing - 1/2 tsp
Dried chillies - 2 nos
Curry leaves

Added more oil than usual to increase the shelf life. Perfect with Idli, dosa or rice.
