RECIPES
**SMOKED VEGETABLE AND LENTIL SOUP**
These ingredients are not precise measurements, I tend to 'eye-ball' ingredients and every soup is different. It is easy to alter the consistency by either adding more liquids to thin it, or more red dry lentils to thicken it.
Approx 1kg of frozen veggies (I used carrot, mushroom, cabbage, courgette, cauliflower, peas)
1 large fresh white onion
100g dry red lentils
2 TSP smoked paprika
Enough vegetable stock to fill your saucepan to the same level as the vegetables
1 TSP onion powder
1/2 TSP garlic powder
1 Tin (400g) chopped tomatoes
METHOD
Make your stock, I use Boullion.
Place the frozen veggies into a saucepan, including the chopped white onion
Cover with stock, bring up to a boil
Add chopped tomatoes, seasonings.
Reduce the heat, to simmer. Cook for 30 mins at least, I cooked for 1 hour.
Blend to the consistency you like.
