Didn't get the chance to grab a box of Trader Joe's ube mochi pancake/waffle mix? I present to you, a fun & tasty alternative recipe. I used real ube-- no extract needed or food coloring. Typically, ube is originally colorfully purple. The one I steamed this time happened to be one of less color by chance, and I definitely didn't want it to go to waste. The texture is lightly chewy yet soft. Looking for some cooking inspiration? I recommend you give this mix a try. Will make again for sure. Let me know how it goes!!
Ingredients I used:
A tiny bit more than 1/2 a med/large ube
^steamed & mashed (i like leaving a few bits unmashed)
^comes out to be about 2/3 cups of mashed ube
1 egg
1-2 tbsp sugar (your preference)
^i like less sweet since ube is originally lightly sweet
^i also prefer the brown sugar over white
1 strong dash of cinnamon (for extra flavor-- optional)
2/3 cup or so of milk
^you can add in a bit of melted butter-- optional)
-mix all these "wet" ingredients together-
1/3 cup or so all purpose flour
1/3 cup or so glutinous rice flour
^make sure it's the glutinous/sticky rice kind
Optional-- add in a dash of baking powder
^it might make it a bit more airy/fluffy
^i tried without & it seemed to be okay
1 good dash of salt
^maybe about 1/2 tsp? or so
-mix it all with the wet mixture-
-should be thick/flowy testure & not runny/too chunky-
-can use milk/flour to adjust-
-cook on medium heat-
-ready to flip/eat when lightly/golden brown-
^your preference
-i really like the combo of flavors w/ BUTTER TOPPING-
-adding honey/syrup might drown out a bit of ube taste-
-could top with some whip cream but not too sweetened-
-i like to top it off with froooooooots-
